Sint Eustatius recipes - something new for your family?
St. Eustatius is one of the Dutch islands in the Netherlands Antilles that have some interesting foods and quite a few beautiful beaches to enjoy this area. Appelkoek has its ingredients listed and these can serve six adults. Ingredients: 2 medium apples, 1 1/2 cups flour, 3 1/2 teaspoons baking powder , 1/2 teaspoon salt, 6 tablespoons granulated sugar, divided, 1/4 cup margarine or butter, 1 egg, well beaten, 3/4 cup milk, 1/2 teaspoon ground cinnamon. Method: Peel and cut apples into eighths (wedges). Sift together flour, baking powder and salt with 4 tablespoons of the sugar. Cut in butter/margarine. Combine egg and milk and add to flour mixture. Turn batter into greased 8-inch square cake pan. Press apple wedges partly into batter. Combine remaining 2 tablespoons sugar and cinnamon, sprinkle over apple. Bake at 425 degree F for 25 to 30 minutes. Chicken Souse: Ingredients: 1-3 pound broiler fryer chicken cut up, 1 quart water, 1 celery rib, sliced, 1 medium onion, sliced, 1 small red of green bell pepper, cut into thin strips, 3 potatoes, peeled and cubed, 1/4 cup fresh lemon juice, Salt and Pepper to taste, Dash hot pepper sauce. Method: Cover chicken with water; and remaining ingredients. Heat to boiling; cover and reduce heat. Simmer for 1 hour or until chicken is done. Serve with additional lemon juice and red or green pepper.
